SATC Consulting (Smithy and The Chef Pty Ltd) is the management collaboration of Andrew Hickie and Sarah Smith.

Combining 20+ years spent in hospitality, media and events, this is the newest arm of their company following restaurant, catering and concierge business ventures.

Meet the leadership team

Andrew Hickie

Co-Founder | Head Chef

Andrew has cooked for some of the world’s biggest celebrities having travelled the globe for years aboard the private super yacht for billionaire David Geffen, where he managed VIP dining experiences for the likes of Tom Hanks, Oprah, Tony Blair, Robert De Niro, Ellen De Generes and Bruce Springsteen to name a few.

After years abroad, Andrew returned to Australia as Executive Chef for Henley’s Wholefoods to lead the launch and roll-out of health food cafes in Sydney including managing all staff, kitchen fit-out and menu creation.

Andrew’s career continued in the business side of the kitchen – next leading the Menu Development for ‘Stix’, one of Australia’s premium caterers, where he managed the clients Qantas First Class, Etihad and Macquarie Bank.

Prior to becoming a restaurateur, Andrew represented 300+ artisan providore clients in food distribution across Eastern Sydney – connecting the best produce to the best Chefs.

As Executive Chef for his debut restaurant, Andrew managed all team training, curated menus for greater profitability, supervised budgets and accounting, licencing requirements and supplier relations.

Andrew supervises new projects from their idea to opening day. He is available for on-site staff training for menu development and service techniques.

Sarah Smith

Co-Founder | Communications & Events

Sarah has spent 20+ years working in the communications industry with leading brands in the music, entertainment, media, travel and not-for-profit sectors.

With a Masters in Journalism, Sarah began her career writing travel editorial for national tourism media. She hosted media from around the world to drive domestic tourism and worked alongside Tourism Australia as part of the Sydney 2000 Olympics Media Centre team.

In 2009, she helped launch the Sydney International Food Festival for Fairfax Media. She also directed the national publicity campaign for the prestigious SMH Good Food Guide.

Since 2011 Sarah has led the Communications team for Sydney Opera House, and was Senior Director at Universal Music Australia managing the promotion and media visits for the likes of Elton John, Bryan Adams, INXS and Air Supply. Most recently, Sarah returned to her stomping ground as Head of Marketing Communications for Arthur Boyd’s Bundanon Trust.

As General Manager for the duo’s restaurant, Sarah re-developed the business brand, marketing, social media, print collateral and managed concierge services and events.

Sarah leads brand development to ensure all parts of a business speak the same language. She delivers customer engagement services including digital media, marketing strategy and communications planning, as well as media and stakeholder issues management.

Sarah oversees concept development for new projects and coordinates dining event experiences including re-launch and opening nights, and customer VIP events.
